Tasting Notes
The nose opens with a vibrant fusion of ripe mango and sweet persimmon, offering a rich, tropical allure that is both luscious and inviting. On the palate, the wine unfolds with the crisp, tart brightness of white cranberry, complemented by a pristine, almost ethereal freshness reminiscent of freshly fallen snow.
Vineyard Notes
The apples came from Glaize Brothers in Winchester VA. They have over 750 acres of bearing orchards on prime ground.
Production Notes
The apples used are Styman, Hewes Crab, Winesap, Goldrush and Black Twig. The apples were pressed, blended, and fermented slowly at 56F. The cider was made sparkling in the Charmat Method.
Winemaker Notes
I've tried alot of ciders over the years that lack refinement: not enough apple character, poor carbonation and too much sugar. We addressed all those issues and made something that is sure to please.
